Watermelon & Cucumber Salad

INGREDIENTS:

  • ¼ Watermelon (seedless)
  • 2 Lebanese cucumbers
  • 4 tablespoons olive oil
  • 1 lime, juice & zest
  • ½ teaspoon freshly cracked black pepper
  • 180g Feta
  • 80g Black olives, whole & seeded
  • ½ cup Fresh Mint, chopped
  • 2 tablespoons chives, finely chopped
  • Extra small mint leaves to decorate
 

METHOD:

  1. Remove rind from watermelon and cut in to large bite sized pieces.
  2. Slice cucumber in half lengthwise, and then cut in to diagonal pieces.
  3. In a large bowl whisk olive oil, lime juice, zest and black pepper.
  4. Place watermelon, cucumber, crumbled feta, olives, mint and chives into the bowl with whisked dressing.
  5. Carefully toss salad, place on a serving dish, sprinkle with extra mint and serve immediately.
 
Handy Hint:  Use watermelon and cucumber straight from the fridge, to make for a cold and refreshing salad.
