Salad Platter Cups with Balsamic and Olive Oil Dressings

Ingredients

  • 6 butter lettuce leaves
  • 6 spears asparagus, blanched
  • 3 radishes
  • 2/3 cup medley tomatoes
  • 2 slices Swiss cheese, cut into tiny stars
  • 6 fresh pea pods, one shell removed
  • 6 black olives, pitted
  • 2 tablespoons pomegranate seeds
  • 3 tablespoons balsamic reduction
  • 5 tablespoons extra virgin olive oil

Recipe

Step 1 Start with cups of butter lettuce leaves and fill with vegetables distributing them evenly among cups.
 
Step 2 Whisk the balsamic reduction and olive oil together and drizzle over the salad.
